Too often kids are eating processed foods loaded with msg, salt and sugar. And the fruits and vegetables they often get are covered with pesticides, unripened and have traveled thousands of miles also with little nutritional value. In fact many youth today are actually suffering from malnourishment. Earth Bites is a hands on program giving kids the experience and knowledge to nourish themselves. Community gardeners teach students how to grow their own produce in the winter, spring and summer months. Students also work with nutritionists to learn how to create some of their favorite snacks in healthy and delicious ways using local seasonal produce. Toffee apples with brown rice syrup, hummus dip, fruit smoothies, apple crisp, oatmeal cookies,
chocolate zucchini cake, garlic bread, pizza, veggie burgers.
Earth Bites Project Outline:
Earth Bites is an extra curriculum class, led by experienced and fun facilitators from Rocky Mountain Education Society. Each session is approximately one hour long and the program runs for a one year period.
September: Building a lasagna garden and planting Winter Vegetables: Kale, leeks, onions.
October: Planting and cooking with garlic.
November - January: Learning how to make student’s favorite foods in more nutritious ways.
February: Sowing greens, broccoli, pea shoots and more.
March: Planting potatoes in tubs
April - June: Continuing to sow and plant seedlings in garden. Harvesting their produce and creating delicious dishes salads, pizzas, pastas and salsas with it.
